Keep in mind there is no reason you need to use carp here; it's just that carp is traditional. Any small fish that can fit in a wok will do: Rock cod, bluegills, smallmouth bass, white bass, black seabass, porgies, spot, croaker – you get the point. Instructions to make Curried Small Carp:
- In a bowl mix flour, maggi cube and coat fish and set aside.
- In a deep pan add olive oil and fry, scotch bonnet, mustard seeds and bay leaf for 1 minute.
- Add onions, pepper, and saute. Add garlic, curry powder and the rest of the seasoning and fry for one minute. Add tomatoes and mix well
- Add fish and fish stock and simmer for 10 - 15 mins or until fish is cooked. Add salt and pepper to taste.
- Serve with rice, mushy peas and sweetcorn
- Enjoy.
Carp is traditionally served with steamed potatoes or frites, a green salad, lemon wedges, and mayonnaise, and an Alsatian white wine such as pinot blanc. The fish is typically eaten with hands, not utensils. A sharp knife is essential if you plan to cut perpendicular through the spine for steaks. Additionally, small bones will remain in fillets. In Iraq, carp is used to make Masgouf.
