Bring a large pot of water to a boil. Salt the water, add the pasta and cook until al dente; drain. Transfer the sausage to a bowl. Season with freshly ground pepper and salt, to taste.
Instructions to make Sausage and bean pasta:
- Cut all vegetables and heat up some oil in a pan. Fry the veggies over a medium heat for 5 min. Ignore the yellow pepper, i just added it because it was left over, but you don’t have to use it. Add seasonings and fry a bit longer.
- Meanwhile cut the sausages. Then add them and fry for 2-3 min. Add the tomato puree turn up heat and fry over a high heat for 1 min. Pour in broth and beans. Stir all well. Simmer for 5 min.
- Boil pasta and add straight away to the sauce. You can prepare the sauce ahead, just boil the pasta whenever you are ready to eat. Enjoy <3
Add additional pasta water, a few tablespoons at a time, if needed for moisture. Remove the pan from the heat, add the butter, Parmesan, lemon zest and lemon juice, and toss until the butter is melted. Add the pasta and cook, uncovered, until the pasta is tender. Check the seasoning and add more salt and pepper to taste. If using low, turn to high.
