  6. Take 1 large yellow capsicum(pili pili hoho) or two small one
  7. Make ready 1 large red capsicum(pili pili hoho) or two small ones
  8. Prepare 2 large green capsicum(pili pili hoho) or 4 small ones
  9. Prepare 2 large tomatoes or 4 medium tomatoes or half a can of canned 400g tomato paste
  10. Get 1 large onion
  11. Make ready 3 cloves garlic (kitungu saumu)
  12. Make ready small bunch of coriander leaves(dhania)
  13. Make ready 3 tablespoons cooking oil
  14. Make ready 1/4 salt(optional)
  15. Make ready I teaspoon of Royco powder or 2 royco cubes(optional)
  16. Take I teaspoon of red chili or black chili(pepper) (optional)

Under medium level of heat on the cooker pour the oil into a cooking pan or pot, then add the onions, wait until they turn brown then the garlic,after 2minutes add the capsicum and carrots after 3 minutes. Allow it to cook for 3 minutes then add the tomatoes and/or tomato paste and chili/pepper and stir well until the water from tomatoes has reduced.
  4. Add the boiled beans and corn/maize to the above mixture and mix them together at this time you can add a pinch of salt if if it was not enough earlier. Continue stirring then take the royco powder or cubes crush them pour into a cup with a small amount of water, stir then pour into the mixture, you can now add the coriander leaves. Continue stirring and ensure the water in the githeri can be barely seen or you can stir until it completely evaporates.(takes only 10minutes)
  5. Remove from the cooker and serve. You can eat it alone, or with rice or chapati as an accompaniment alongside a cold or warm glass of juice depending with the weather.
